Made in the English Stilton style, our seductively creamy Northland Blue has well rounded assertive piquant flavours with both sharp and fruity notes.
Using a range of cheesemaking techniques, it is turned, pierced, and matured for at least 3 months before reaching its full potential. Its taste and texture can fluctuate with seasonal and milk composition changes, much like a vintage of wine.
As with all our cheeses, handmade with aroha and care, on the day of milking, from certified organic cow's milk.

Serving inspiration:
Delicious with pears, walnuts and drizzled with honey. It works well with dried fruits such as apricots, currents and raisins, as well as fresh figs, blackberries and pears. If you want to make it into a dish, it goes superbly with beef and polenta.
Perfect match: Cabernet Sauvignon, port wine, a nice dark sweet beer, stout or hoppy IPA.
